WHere is an easy version of a drink found on our latest cocktail list. This is a batch pre-mixed which is packed with the flavours of the holiday season, which makes it perfect for a festive gathering. Any leftover cordial you can use for brunch beverages, desserts, or for additional servings of bikinis.
Bikini Recipe
Yields 10 guests
Ingredients for the Clementine Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Citrus Syrup: Place the listed items into a pan, bring to a simmer, agitating until the sugar dissolves. Then, turn off the heat and let it to cool completely. Transfer into a sealable bottle, seal and store chilled, it can be stored for about a month.
Preparing the Batch Mix: Mix the specified spirits and syrup in a large bottle, leave to sit for an hour, then filter it , ideally through muslin, to ensure it's fully clarified.
To serve: Pour 85ml from the batch mix into a stirring glass containing ice, and agitate gently for one minute to chill. Pour into a chilled martini glass or similar, garnish with a few cranberries and finish with a brief mist with the mandarin essence above the glass.
